Most of us would struggle to name a single Georgian dish but, as Jamie Oliver finds out on this inspiring one-off food research trip, the country’s cuisine is packed with flavour and made with passion. Herbs play a major part, as do walnuts, pomegranates and vegetables, so after a wander around a food market in Tbilisi, he learns how to make dumplings called khinkali, a tasty vegetarian meze featuring a walnut paste and the sharing dishes that are served at a supra, a traditional feast. The food looks glorious and there’s laughter and joy wherever he goes.
